200.00 g apples — cored, finely chopped
300.00 g nectarines — stones, finely chopped
300.00 g pears — ripe, cored and finely chopped
1.00 lemon — zest and juice
500.00 ml castor sugar
6.00 eggs — extra-large, whisked
30.00 ml lemon juice

Place the apples, nectarines and pears in a saucepan and add 100 ml (2/5 c) water. Add the lemon juice and rind and simmer until the fruit is soft.
Process in the food processor and press though a sieve, leaving behind the skin of the fruit.
Use 300 ml (1 1/5 c) of this pulp for the spread. Add the butter and castor sugar and heat slowly until the butter has melted and the sugar has dissolved. Stir continuously.
Blend the eggs and the 30 ml (2 T) lemon juice. Remove the fruit mixture from the stove and add small quantities of the egg mixture at a time while stirring continuously.
Transfer the mixture to a glass bowl and microwave for 10 minutes on medium heat (50 per cent power). Stir occasionally until the mixture has thickened sufficiently to coat the back of a wooden spoon. OR heat over a saucepan of boiling water on the stove until the mixture thickens, about an hour.
Spoon the mixture into clean, sterilised jars and seal. Store in the fridge and eat within a month.
Makes about 1,6 litres of spread.
