Cut each banana lengthways into thirds.
Fry in hot oil, then drain on a paper towel and season with salt.
You must use very green bananas; order them from your fruit and veg shop.
They have a soft, potato-like texture when cooked and are delicious, especially with plenty of mango salsa (see recipe).
