We've all got a tin of four-bean mix lying around – here's a quick soup you can make using this pantry staple!

Ingredients (10)

1 tsp oil
2 tsp PnP potjiekos seasoning
1/4 tsp black pepper
1 tsp dried thyme
1 carrot — peeled and chopped
1/2 onion
1 tin four bean mix
1/4 tsp salt
1 beef stock cube
1 tsp garlic

Method:

Heat 1tbsp oil in a pot on medium heat. Add onion, carrot and garlic cook; sauté for 4 minutes.

Drain the brine from the beans and dissolve beef stock in 1½ cup of hot water.

Stir in dissolved beef stock, beans, potjiekos seasoning, thyme, salt and black pepper.

Cover and cook for 10–15 minutes.

Serve with bread.
