Flavoursome beef curry
|1 kg||steak — cubed, stewing|
|2||onion — chopped|
|1 cloves||garlic — cloves, crushed|
|15 ml||sunflower oil|
|5 ml||ginger — ground|
|10 ml||curry powder|
|2 ml||cumin — ground|
|25 ml||wine — dry white|
|10 ml||soy sauce|
|3||lemon — leaves|
|25 ml||chutney — fruit|
|375 ml||stock — beef|
|75 ml||mango juice|
Fry the beef cubes, onions and garlic in the oil in a non-stick saucepan until lightly browned.
Reduce the heat and stir in the ginger, curry powder, turmeric and cumin.
Heat the spice thoroughly, but take care that they do not burn.
Add the rest of the ingredients, except the mango juice and the cornflour.
Cover and simmer for about 1 1/2 hours, until the meat is tender.
Mix the mango juice and the cornflour and stir into the meat mixture.
Heat for a few minutes until the mixture comes to a boil and the sauce thickens.
