Moscow Mules get all jazzed up for the festive season with refreshing watermelon juice and a splash of pomegranates. Delicious!
|375 ml||watermelon — chopped|
|125 ml||pomegranate — juice|
|2||lime — juice only|
|60 ml||pomegranate rubies|
|4||lime — slices|
Liquidise the watermelon in a blender and strain out the seeds. Combine the watermelon juice, vodka, pomegranate juice and lime juice in a pitcher and refrigerate until ice cold, at least 2 hours.
Spoon the pomegranate rubies into 4 glasses and top with some ice. Divide the Moscow Mule mixture between the glasses and top it off with ginger beer. Add more or less ginger beer depending on how strong you prefer your drink. Finish the drinks off with a slice of lime and a mint sprig.
Tip: For the adventurers that like a bit of extra spice, simply pop in a few jalapeno slices with the Moscow Mule mixture. The longer you leave it to marinate, the spicier it will be.
