Heat oil in a saucepan. Add garlic and sauté over medium heat until softened. Add tomatoes, freshly chopped basil (or 10 ml dried), freshly chopped origanum (or 2 ml dried) and the sugar.
Simmer gently for 15 minutes, stirring occasionally. Season to taste with salt and freshly ground black pepper. Blend in a food processor until smooth. The sauce is now ready to use or cool and freeze.
