|100 g||pork — Eskort BBQ pulled|
|1 tsp||Robertson's baking powder|
|3 tbsp||castor sugar|
|1 cup||creamed sweetcorn|
|1 tbsp||fresh chives — chopped|
|salt and freshly ground black pepper|
Combine all the ingredients in a mixing bowl then scoop the batter into takeaway coffee cups lined with muffin papers.
Cover the muffin batter with a small piece of baking paper and freeze.
Pop the frozen muffin batter into the microwave for 5 min on high with the baking paper still on the batter.
Be careful when removing from the microwave. Enjoy while warm.
