Easy fish and chips
|vegetable oil — for frying|
|250 ml (1 cup)||self-raising flour|
|salt and freshly ground black pepper — to taste|
|100 ml||water — sparkling|
|4 pieces||spar hake|
|2||eggs — beaten|
|spar frozen chips or sweet potato wedges|
|lemon — cut into wedges|
1 Heat the vegetable oil in a heavy-bottomed pot.
2 In a large bowl, whisk together the flour and salt and pepper.
3 In another bowl, whisk the water and the eggs.
4 In batches, dust the fish with the flour, and then carefully dip into the egg batter. Shake off any excess, and then gently place into the oil. Fry until golden, 2-3 minutes per side. Drain on a paper towel-lined plate and season immediately with salt and pepper.
5 Fry or oven-bake the frozen chips.
6 Serve the fish and chips with lemon wedges, vinegar, tartar sauce and tomato sauce.
