Double-choc banana-bread waffles

Ingredients (17)

WAFFLES
2 1/2 cup quick oats
3 bananas — chopped
1/2 cup plant-based milk
3/4 cup water — or plant-based milk
1/3 cup maple syrup — or agave
1 1/2 tbsp apple cider vinegar
1 1/2 tbsp Baking powder
1 tsp instant coffee powder
1 tsp vegan protein powder
1 tbsp cornflour
1/3 cup cacao powder
1/4 tsp salt
1 tsp Vanilla essence
handful dark chocolate chips — plus extra to serve
CHOCOLATE SAUCE
1/3 cup maple syrup — or agave
1/3 cup cacao powder
1 pinch salt

Method:

For the waffles:

Place all the ingredients, except the chocolate chips, in a high-speed blender and blend until smooth. (See notes below if you don’t have a blender). Fold in a couple chocolate chips before baking.

Heat up your waffle maker – or preheat the oven to 175⁰C for a waffle pan – spray with non-stick spray and scoop 2-3 tbsp for each waffle, sprinkle on some extra chocolate chips on top.

Bake for 5-7 minutes in the waffle maker/waffle pan or until fully cooked.

For the chocolate sauce:

Mix everything together, adding a bit of boiling water to smooth it out.

Serve with the waffles, fried bananas and extra chocolate chips!

Notes:

If you don’t have a blender, you can alternatively mash the banana and fold in the oats, or make use of whole-wheat flour. Or try buckwheat or quinoa flour for a gluten-free option.

Other toppings can be fruit like blueberries and strawberries, nut butter or whipped coconut cream with toasted nuts!
