|1/4 cup||orange juice|
|1/4 cup||stock — chicken|
|1||chicken — whole|
|3 Tbs||butter — softened|
|2||grapefruit — ruby, quartered|
|1||onion — quartered|
|15 g||fresh sage|
|sea salt and freshly ground black pepper|
Preheat the oven to 180°C.
Mix together the grapefruit juice, orange juice, honey, stock and star anise.
Place chicken in a deep roasting pan, rub with butter, and season well, pour over the liquid. Place the grapefruit quarters, onion and sage around the chicken.
Place pan in the oven and bake for 11/2 hour, basting frequently with pan juices.
When cooked, remove from oven. Serve chicken with grapefruit quarters and pan juices.
