Peel the potatoes and place in a saucepan with cold water and bring to the boil.
Add a teaspoon of salt and cook until potatoes are half-cooked.
Drain and scrape the potatoes with a fork.
Pre-heat the oven to 22°C. Pour the oil into a large baking dish.
Place the baking dish into the oven so that the oil warms.
Place the the potatoes in the oil and coat thoroughly.
Put in the oven and roast each side for 15 minutes until brown.
Decrease the heat and roast for another 30 minutes.
Take the potatoes out and season with salt.
