Ingredients (12)

Marinade: strong rooibos tea
125.00 ml oil
125.00 ml tomato sauce
125.00 ml chutney
30.00 ml Worcestershire sauce
60.00 ml vinegar — grape
5.00 ml garlic — cloves, crushed
5.00 ml mustard — powder
1.00 onion — chopped
10.00 ml fresh ginger — grated
5.00 ml ginger — ground
Meat: pork rib
7.00 ml salt
5.00 ml freshly ground black pepper — to taste

Method:

Marinade Bring all the marinade ingredients to the boil
in a saucepan and cook vigorously for 5 minutes.
Meat Arrange the meat in a flat dish and pour over the
marinade. Marinate for at least 4 hours. Remove the meat from the marinade and pat dry with paper towels. Braai the meat over medium-hot coals or grill in the oven until done, basting often with the marinade. Season with
salt and pepper.
