These decadently chocolate mini log cakes are the perfect for lunch boxes or sweet snacks!

Ingredients (14)

1 cup flour
1/4 tsp salt
1/2 tsp baking powder
1 tsp bicarbonate of soda
1/3 cup cocoa powder
1 cup sugar
1/2 cup oil
1/2 cup Hot Water
1 tsp instant coffee
1/2 cup milk
2 eggs
1 tsp vanilla
For the ganache
1 cup chocolate
2 tbsp cream

Method:

In a large bowl sift together flour, salt, baking powder, bicarb, cocoa and sugar.

Add oil, coffee (mixed into the hot water) and milk. Beat for 2 mins.

Add eggs and vanilla essence, beat for 2 more minutes.

Pour into a mini-log pan to make individual cakes or a bundt pan for a whole cake (cooking times may vary), bake at 180°C for 20-25 mins till toothpick inserted comes out clean.For chocolate ganache

Melt chocolate in microwave at 30 sec intervals till it starts to soften and get glossy but still holds it’s form. Add cream and microwave again till you can blend easily with a fork (this way the chocolate doesn’t cease when cream is added).

Notes

This recipe can be used to make chocolate cupcakes.
