Jaffles have never been so tempting. These curry pork jaffles are a quick dinnertime fix that’s ready in just a few minutes. Perfect for using up leftover bread and pantry staples, these curry pork jaffles are a wholesome and delicious meal on the go for weeknights and weekends.

Ingredients (9)

500 g minced lean pork
oil — to fry
1 small red onion — diced
1 tbsp garlic cloves — crushed
1 tbsp curry powder
1/2 cup chutney
1 cup mixed vegetables — peas, corn and carrots, cooked
bread — of choice
butter

Method:

Add some oil to a hot pan, and then add in the diced onion and spices, and fry until fragrant.

Add the pork mince and fry until brown. Add the chutney and the vegetables and cook for a few minutes more.

Get your bread ready, butter the bread and add 2-3 tbsp of the cooked pork mince. Add the top layer of bread and press into the jaffle pan.

Slice off the access bread and place on a braai or over a gas stove top to brown for 2-3 minutes on each side.

Serve the Jaffles with extra chutney.
