Ingredients (11)

750.00 ml rice — cooked
410.00 g pineapple — tinned chunks, drained
1.00 apples — red, cored, diced
175.00 g bacon — finely chopped and fried
50.00 g cashew nuts — roasted
6.00 fresh chives — chopped
65.00 ml coconut — optional
45.00 ml mayonnaise
45.00 ml yoghurt — plain
Tabasco sauce — a few drops
15.00 ml lemon juice

Mix all the salad ingredients. Add the coconut if desired.
Blend all the dressing ingredients and pour over the salad.
Mix lightly until all the salad ingredients are well coated with the dressing. Chill until just before serving.
