Creamy maize-meal corn dogs

500 ml maize meal — creamy
330 ml flour
45 ml sugar
salt and freshly ground black pepper
10 ml baking powder
eggs — large, beaten
375 ml milk — full cream
oil — for frying

Method:

Whisk together maize meal,flour, sugar, baking powder, saltand pepper. Stir in
eggs and milk.Fill a wide pot with enough oil to submerge the sausages.

2 Meanwhile, pat the sausages dry
and roll in flour to coat. Dip 1 sausage into the maize meal batter,turning
until completely coated. Let any excess batter drip off. Wipe away any extra
batter using your fingers to evenly coat sausage.

3 Gently lower the sausage in to
hot oil. Cook corn dogs, turning to cook evenly, until golden brown or for
about 5 minutes. Transfer to a paper towel-lined tray. Working in batches of 3,
repeat with remainingcorn dogs and batter. Serve with tomatoes and cucumber
sticks.
