Creamy curry baked potato balls

An easy recipe for leftover mashed potato!

Ingredients (6)

500 g mashed potato — leftovers cooled and rolled into balls
2 tbsp curry paste
1 spring onion — chopped
2 tbsp fresh parsley — chopped
1/2 cup coconut milk
1/2 cup gouda cheese — grated

Place the mashed potato balls on a lightly greased tray and bake in an oven preheated to 200°C for 10 minutes.

Place the curry paste and spring onions in a pan over medium heat. Mix to combine, once combined add the coconut milk. Heat and simmer for 5 minutes.

Add the bakes potato balls, gentle stir to coat in the curry sauce. Top with cheese, garnish with the chopped parsley and serve warm.
