Creamy curry baked potato balls
|500 g||mashed potato — leftovers cooled and rolled into balls|
|2 tbsp||curry paste|
|1||spring onion — chopped|
|2 tbsp||fresh parsley — chopped|
|1/2 cup||coconut milk|
|1/2 cup||gouda cheese — grated|
Place the mashed potato balls on a lightly greased tray and bake in an oven preheated to 200°C for 10 minutes.
Place the curry paste and spring onions in a pan over medium heat. Mix to combine, once combined add the coconut milk. Heat and simmer for 5 minutes.
Add the bakes potato balls, gentle stir to coat in the curry sauce. Top with cheese, garnish with the chopped parsley and serve warm.
