Switch on the oven grill. Heat the oil and stir-fry the courgettes and leeks until tender but still crisp. Season to taste with salt and pepper.
Turn into an ovenproof serving bowl and sprinkle with feta cheese and rosemary.
Grill until the cheese is lightly browned. Serve hot.
