Coriander and ginger pesto

Serve spooned over grilled or roasted fish, chicken, pork or lamb. It's also delicious on a sandwich or when making stir-fry.

Ingredients (8)

250 ml fresh coriander
4 spring onion — chopped
2 garlic — cloves, crushed
15 ml fresh ginger — freshly grated
30-60 ml fresh chillies — 573
1 fresh chillies — chopped
15 ml soy sauce — light
30 ml cashew nuts — toasted

Combine all the ingredients together in a food processor and blend until smooth. Spoon into sterilised jars. Pour a little oil over the top. Seal and store in the fridge for up to a month.
