Ingredients (11)

2.00 eggs — large, beaten
225.00 g flour — plain
5.00 ml Baking powder
7.00 ml cinnamon — ground
30.00 ml nestlé coffee powder
300.00 ml milk
250.00 ml cream
30.00 ml sugar
125.00 g butter
175.00 g castor sugar
75.00 g sugar — dark brown

Method:

Preheat oven to 180 ºC. Grease 2 x 20 cm sandwich tins. Beat together butter and sugars and whisk in egg, a little at a time. Sift together flour, baking powder and cinnamon and stir into butter mixture. Blend coffee with milk and stir into mixture. Divide between the tins. Bake at 180 ºC for 25 minutes, or until firm to the touch and a skewer inserted comes out clean. Cool on a rack and remove from tins. Sandwich together with whipped, sweetened cream.
Serves 10.
