310 ml milk
250 ml cream
1 cinnamon — stick
80 ml maize meal
80 ml sugar
2 egg yolks
cinnamon sugar — to serve

Method:

Combine the 250 ml (1 cup) milk and cream in a small saucepan. Put over medium heat with the cinnamon. Cook, stirring constantly, for about 5 minutes or until hot. Remove from heat.

Whisk the maize meal, sugar and the rest of the milk in a bowl until well-combined. Remove cinnamon stick. Pour maize mixture into the hot milk mixture, whisking constantly.

Put the mixture over low heat. Cook, stirring constantly, for 15 minutes or until the porridge thickens and coats the back of a metal spoon.

Remove from heat and stir in the egg yolks. Serve sprinkled with cinnamon sugar.
