Cinnamon-apple bread pudding

Ingredients (10)

4 bread slices
2 apples — thinly sliced or chopped
3 tsp unsalted butter — softened
2 tsp raisins
2 tbsp nuts — chopped
1 cup milk — warmed
2 large eggs
1/2 cup castor sugar
1 tsp cinnamon
1 tsp vanilla extract

Method:

Preheat the oven to 180C.

Brush the sides and bottom of a baking dish with butter and set aside. Butter the bread on one side using the remaining butter.

Cut the bread slices into cubes and spread it in the prepared baking dish. Cut the fresh apple in thin slices or small pieces.

Scatter the apple pieces over the bread in the baking dish. Scatter the raisins and nuts over the bread. Set aside.

Break the eggs in a mixing bowl. Add the castor sugar and whisk well. Pour the warm milk in and whisk until smooth and the sugar dissolves. Stir in the cinnamon powder and vanilla extract to the custard.

Pour the custard all over the bread in the baking dish. Push down all the bread with a spoon so that it soaks in the custard. Cover the pudding and set aside for about 15 minutes.

Bake for about 30 minutes or until the top is golden brown and the custard is set. Serve hot with cream or vanilla ice cream.
