Ingredients (5)

quantity basic shortcrust pastry (see recipe)
3.00 chorizo sausage — sliced
250.00 ml mozzarella cheese — grated
cayenne pepper — pinch
quantity basic egg custard (see recipe)
1.00 tomatoes — peeled, deseeded, thinly sliced
5.00 ml dried oregano

Preheat the oven to 200 ºC and line a 30 cm quiche pan with shortcrust pastry. Bake blind as described.
Stir-fry the sausages in a hot pan until fragrant. Sprinkle the mozzarella in the bottom of the pie crust and scatter the sausages on top of the cheese. Add a pinch of cayenne pepper to the egg custard and carefully pour into the pie crust. Arrange the tomato slices on top and sprinkle with the origanum. Bake for about 30-40 minutes until set. Leave to cool slightly and serve.
