Chocolate shortbread cookies with a dark chocolate ganache filling – decadently delicious!

Ingredients (11)

COOKIES
250 ml salted butter — soft
160 ml brown sugar
5 ml Vanilla essence
1 salt
560 ml flour — cake
80 ml cocoa powder
80 ml gold cake sprinkles
GANACHE
200 g chocolate — finely chopped
60 ml cream
to serve — to serve
20 edible christmas fondant decorations

Method:

For the cookies, pre heat the oven to 180°C and line 2 baking trays with baking paper.

 

Combine the butter, brown sugar, vanilla essence and salt and whisk with an electric mixer, 2 minutes. Stir in the flour and cocoa powder and mix until smooth.

 

Spoon out 1½ tablespoon-ful portions of the cookie dough and roll into balls. Dip the balls into the gold cake sprinkles to coat. Place the cookie dough balls on the lined trays. Flatten them slightly with the palm of your hand. Press an indent into each cookie disc with your thumb, but do not press it all the way through. Bake for 15-18 minutes until firm. Leave the cookies to cool on the trays for 10 minutes before transferring to a cooling rack.

 

For the ganache, combine the chocolate and cream in a double boiler and heat over low heat until smooth and melted. Spoon or pipe the ganache into the hollows of each cooled cookie and decorate with a fondant decoration.

 

TIP: A medium-sized ice cream scoop with a lever works perfectly to portion out evenly sized cookie dough.
