Chilli garlic potato bites in sweet potato soup

Ingredients (11)

McCain Chilli Garlic Potato Bites — for garnish
olive oil — for frying
1 onion — diced
3 garlic cloves — minced
1 tsp paprika
1 tbsp fresh thyme
750 g McCain Sweet Potato
200 g McCain Diced Carrots
3 cup vegetable stock
50 ml cream
salt and freshly ground black pepper — to taste

Method:

Cook McCain Chilli Garlic Potato Bites from frozen according to package instructions and set aside.

In a large pan, heat the oil and add the onions. Allow to caramelise before adding the crushed garlic, paprika and thyme.

Add the McCain Sweet Potato and Diced Carrots. Allow to cook with the lid off for about 5 minutes and then add the stock and simmer for a further 8 minutes.

With a handheld blender, blend the soup until the desired consistency is reached. 

Pour in the cream and adjust seasoning.

Pour the soup in a bowl, top with the McCain Chilli Garlic Potato Bites and enjoy.
