Chicken tray bake
|½ tsp||peppercorns — black, cracked|
|1 Tbs||chicken spice|
|½ cup||wine — red|
|4||garlic — cloves, bruised|
|1||onion — halved and quartered|
|1||fresh rosemary — chopped|
|baby tomatoes — handful|
Preheat the oven to 200ºC.
Place the chicken in a ziplock bag, add the salt, pepper and herb & spice mix and give it a good shake to coat the chicken.
Pour the wine in a baking tray. Place the garlic, chicken, sausages and onions on top of the red wine. Dot with the cut sprigs of rosemary and sprinkle the baby tomatoes on top.
Bake for 20 minutes covered in foil, remove the foil and bake for a further 30 – 40 minutes until the chicken and sausages are cooked and the chicken skin is golden brown and crisp.
Pop it under the grill for a few minutes to crisp up further if needed.
