Chicken and spinach meatballs
|1 kg||chicken breast fillets — pureed|
|1/2||mushrooms — finely chopped|
|(you can use the food processor again)|
|1/2 cup||onion — finely chopped|
|60 g||spinach — finely chopped|
|1 tsp||dried mixed herbs|
|1/2 tsp||freshly ground black pepper|
|1 tsp||chicken spice|
|3||eggs — white|
Pre-heat the oven to 180°C. Spray 2 muffin tins with cooking spray or rub with olive oil.
Mix all the ingredients in a big bowl using your hands.
Roll into balls and place onto muffin tray. Sprinkle with some more chicken spices and bake until golden brown.
