Chewy treacle-flavoured air-fryer brown sugar cookies that you can cook up in small batches when you need them!

Ingredients (11)

3/4 cup salted butter — melted
1 1/2 cup treacle sugar — plus extra for sprinkling (optional)
1 egg
1 egg yolk
1 tsp vanilla extract
2 1/2 cup flour
1 tsp bicarbonate of soda
1/4 tsp baking powder
1 tbsp cornflour
1/2 tsp salt
Maldon salt — optional, for sprinkling

Method:

In a medium-sized bow, mix the melted butter and treacle sugar together. (Any packed brown sugar will do)

Add in the egg, egg yolk and vanilla and mix until well combined.

Add in the flour, bicarbonate of soda, baking powder, cornflour, salt and stir until just combined.

Roll the batter into balls (each weighing approximately 30 grams) and refrigerate for at least 15 minutes.

Flatten each cookie ball with a spatula and sprinkle with extra treacle sugar.

Line an air-fryer with baking paper and air-fry in batches of 4-5 cookies at 170°C for 8 minutes, or until nicely golden.

Gently remove the cookies from the air-fryer, sprinkle with Maldon salt and allow to cool.

Notes

The center of the cookies will still be soft after 8 minutes, once cooled this makes for a wonderfully chewy cookie! If you prefer crunchier cookies, air-fry for longer.

Roll any excess batter into balls, flatten slightly and freeze. Cooking from frozen may result in a longer cooking time.

As air-fryers vary, so might the cooking times for each batch of cookies.
