Cheese tomato and walnut pesto breakfast toastie

Ingredients (12)

For the walnut basil pesto
1 handful fresh basil leaves
1 cup walnuts — toasted
1/2 cup parmesan cheese — grated
2 tbsp extra virgin olive oil
1 garlic clove — minced
1/2 fresh lemon — juiced
coarse sea salt
For the toasties
8 slices SASKO Low GI Soy & Linseed White Bread
mozzarella cheese — sliced
1 medium tomato — sliced
fresh basil leaves — optional

To make the walnut basil pesto:

Blitz all the ingredients together and store in a jar in the fridge.

To assemble the toastie:

Spread some of the walnut pesto on one side of four slices of SASKO Low GI Soy & Linseed White Bread.

Top with mozzarella, tomato and fresh basil, then another slice of bread.

Fry on each side on a low heat in butter until golden and the cheese has melted.
