Ingredients (13)

450 g flour — cake
110 g flour — whole wheat
2 tsp instant dried yeast
1 1/2 tsp salt
300 - 375 ml water — lukewarm
3 garlic — cloves, mashed
3 onion — thinly sliced
salt and freshly ground black pepper — to taste
60 ml fresh chillies — 573
olive oil — for frying
125 g cheddar cheese — grated
2 Tbs castor sugar

Place the flour, yeast, sugar, salt, about 300ml of the
water and oil in a bowl and mix well to combine and a dough has formed. (Add
more of the leftover water as needed)

Mix with a dough hook or knead for another 5 minutes or so
until the dough comes away cleanly from the sides of the bowl

Cover with a damp tea towel and set aside in a warm place to
rise until double in size (about an hour or so depending how warm it is)

While the dough is rising, fry the garlic, onion, sugar and
seasoning over a medium high heat until soft and golden brown – about 10
minutes or so

Turn the dough out on a lightly floured surface and press
into a 3cm thick rectangle

Top with the onion mixture and grated cheese, fold the dough
over like a book to enclose the filling and press the edges to secure the
filling inside the dough

Cut the dough into 7 equal portions and place cut side up on
a well greased 20cm x 30cm baking tray

Cover with a damp tea towel and set aside to rise again for
20 minutes

While the dough is proving, preheat the oven to 200 degrees

Brush the proven dough with the milk and bake for 30 – 35
minutes until brown and cooked through and serve while warm
