Carrot, walnut and raisin loaf

Ingredients (16)

1 1/2 cup flour
1 tsp Robertson's baking powder
1 tsp Robertson's bicarbonate of soda
1 tsp cinnamon — ground
1/2 tsp ginger — ground
1/2 tsp nutmeg — ground
1/4 tsp salt
2 eggs
3/4 cup vegetable oil
1 tsp vanilla
1/2 cup brown sugar
1/2 cup white sugar
1 cup carrots — grated
1/2 cup raisins
1/2 cup walnuts — chopped
double cream coconut yoghurt

Mix flour, baking powder, bicarb, cinnamon, ginger, nutmeg & salt. Whisk together eggs, Oil, vanilla and sugars, then mix into the dry ingredients.Fold in the carrots, nuts and raisins. Spoon into a lined loaf tin, then bake in a preheated 180 degrees Celsius oven for 50 min – 1 hour or until a skewer inserted comes out clean.Strain the yogurt in a Muslin cloth to remove any excess liquid. Spread the yogurt over the loaf once completely cooled.
