|2||tomatoes — large Italian|
|1||garlic — cloves|
|3 Tbs||olive oil|
|salt and freshly ground black pepper|
|fresh Italian parsley|
Slice the mozzarella and tomatoes into about 1cm rounds.
Crush the garlic and add to the olive oil and season well.
Squeeze the lemon into the olive oil. Mix well.
Layer the tomatoes with the mozzarella and the fresh basil leaves on a plate.
Drizzle with the olive oil mixture and garnish with chopped chives and parsley.
