Ingredients (8)

1 1/2 cup butternut — cubed and cooked
1/3 cup feta cheese — roughly crumbled
1/4 red onion — thinly sliced
2 tbsp flour
1 tsp dried mixed herbs
2 tbsp curry powder — mild
1 cup cream
fresh parsley — chopped, to garnish

Method:

Preheat an oven to 180°C.

In a bowl, mix the cream, flour, curry powder and dried herbs together and set aside.

In a casserole dish, place the butternut, feta and red onion, pour of the cream mixture and bake for 10-15 minutes or until done.

Garnish with chopped parsley and serve warm.
