For the figs, preheat the oven to 190°C. Arrange the figs, cut-side up, on a lined baking tray and drizzle with the honey. Roast for 6-8 mins until tender.
For the waffles, preheat the waffle iron as per manufacturer’s instructions. Whisk the buttermilk, evaporated milk, melted buttter and eggs together until smooth.
Whisk in the sugar and flour. Lightly grease the waffle iron with non stick cooking spray and cook each waffle for 2-3 mins until crisp.
To serve, top each portion of waffles with some bacon, walnuts and Chevin rounds. Scatter some basil on top and add more honey, if desired.
The evaporated milk can be replaced with regular milk or more buttermilk, if preferred.
For grilled bacon, simply arrange the bacon on a lined tray and grill for 8-10 mins at 190°C.
