Preheat the oven to 180°C. Grease an ovenproof dish with nonstick spray.
Whisk the eggs with the sugar or sweetener.
In a bowl, rub the butter into the ﬂour and salt. Add to the egg mixture and stir until smooth.
Mix the buttermilk and lemon zest and stir into the batter. Spoon into the prepared dish. Bake for 30 minutes.
To serve: Top with grilled lemon slices and a drizzle of honey or berry compote.
TIP: To make the berry compote, put 250g frozen berries and 60ml (¼c) sugar in a glass bowl, and microwave for 5 minutes until the sugar has melted and the berries are soft.
