Ingredients (18)

For the marinade
125 ml yoghurt
5 ml ground turmeric
10 ml garam masala
5 ml chilli powder
5 ml ground cumin
15 ml fresh ginger — grated
2 garlic cloves — crushed
1 lemon
8 chicken breast fillets — cubed
For the curry
15 ml oil — to brown the chicken
60 g butter
1 onion — thinly sliced
5 ml fresh garlic
5 ml chilli powder
5 ml garam marsala
400 g tomato purée
250 ml cream
sea salt and freshly ground black pepper

Method:

Curry is always a firm favourite.

Marinade

Place all the ingredients except the chicken in a bowl and combine well. Add the chicken pieces and leave for 1 hour or overnight.

Curry

Heat the oil in a pan over high heat. Add the chicken coated in the marinade and cook for 3 minutes or until browned. Set aside.

Fry onions in butter over a medium heat. Add garlic, chilli powder and garam masala, fry until fragrant.

Add the tomato purée followed by the cream and chicken pieces. Turn down to low and simmer for 20 minutes. Season to taste.
