Ingredients (9)

500 g butter
600 g castor sugar
215 g flour — cake
100 g cocoa powder
50 ml vanilla — essence
8 eggs — lightly whisked
300 g mixed nuts
300 g white chocolate — cut into pieces
300 g dark chocolate — chopped

Method:

Preheat the oven  to 160°C. Grease a 50x32cm oven proof dish and line with a sheet of baking paper.

1. Melt the butter and castor sugar. Remove from the heat and allow to cool slightly.

2. Sift the flour and cocoa  powder together. 

3. Add the vanilla essence to the eggs.

4. Mix lightly with the dry ingredients until the egg is no longer visible.

5. Add the butter and castor sugar mixture and stir until smooth.

6. Add the nuts and two kinds of chocolate and stir through.

7. Pour into the prepared dish and bake for 40 minutes. Turn the dish halfway through the baking time for even cooking.

8. Cool slightly and cut into squares.

For blondies

Leave out the cocoa powder and increase the flour to 250g. Omit the dark chocolate and increase the white chocolate to 600g
