|30 ml||cooking oil|
|1||onion — chopped|
|1||red pepper — chopped|
|1 tbsp||garlic — crushed|
|1 tsp||cayenne pepper|
|1||canned chopped tomatoes|
|salt and pepper to taste|

In a large pan over medium heat, add cooking oil, onions and peppers. Sauteé until soft.
Add garlic, cumin, coriander, cayenne pepper, paprika, cook for 2 minutes.
Add in the tomatoes, season with salt and pepper. Bring the sauce to a simmer for 10 minutes.
Once the tomatoes are cooked. Using a spoon create wells and crack eggs in the prepared wells. Cover the sauce pan and cook eggs for 3 minutes or more if you want them well done.
Serve with any favourite breakfast side. Eg, avocado, bacon or boerewors.
