Breakfast burger with peas

Ingredients (12)

500 ml peas — frozen
30 ml butter
15 ml lemon juice
30 ml fresh mint — chopped
feta cheese
salt and freshly ground black pepper
15 ml fresh chillies — 573
30 ml mayonnaise
15 ml butter
4 eggs
4 ciabatta rolls — halved horizontally and buttered
4 thin kassler chops — deboned

Method:

1 Peas

Put the peas, butter and lemon juice in a
microwave-proof bowl. Microwave for 2 minutes on high and stir well.

2 Add
the mint, mix and then crumble the feta cheese over. Mix well and season with
salt and pepper. Set aside.

3 Burgers

Heat the oil in a pan and fry the Kassler
chops until golden brown and slightly crispy on the edges.

Remove from the pan
and set aside.

4 Put the ciabatta rolls, cut side down, in a pan and toast
until crispy.

Remove and spread mayonnaise on each half.

5 Heat the butter in
the same pan and fry the eggs to your liking.

6 To serve, spoon a generous
helping of peas on the bottom halves of the ciabatta rolls, followed by a chop
and an egg.

Season with salt and freshly ground pepper, top with the remaining
half rolls and serve immediately.
