|500 ml||peas — frozen|
|15 ml||lemon juice|
|30 ml||fresh mint — chopped|
|salt and freshly ground black pepper|
|15 ml||fresh chillies — 573|
|4||ciabatta rolls — halved horizontally and buttered|
|4||thin kassler chops — deboned|
Put the peas, butter and lemon juice in a
microwave-proof bowl. Microwave for 2 minutes on high and stir well.
the mint, mix and then crumble the feta cheese over. Mix well and season with
salt and pepper. Set aside.
Heat the oil in a pan and fry the Kassler
chops until golden brown and slightly crispy on the edges.
Remove from the pan
and set aside.
4 Put the ciabatta rolls, cut side down, in a pan and toast
Remove and spread mayonnaise on each half.
5 Heat the butter in
the same pan and fry the eggs to your liking.
6 To serve, spoon a generous
helping of peas on the bottom halves of the ciabatta rolls, followed by a chop
and an egg.
Season with salt and freshly ground pepper, top with the remaining
half rolls and serve immediately.
