Braised pork sausage with spinach mash

Ingredients (6)

10.00 ml sunflower oil
8.00 sausages — pork
2.00 onion — sliced
500.00 g potatoes — peeld and cubed
300.00 g baby spinach
50.00 ml butter

Method:

1. Heat the oil in a large frying pan and fry the sausages for eight to 10 minutes, or until golden and cooked through. Remove from the pan and set aside.
2. Add the onions to the pan and fry until brown. Stir in 100ml warm water and return the sausages to the pan. Simmer for 10 minutes.
3. Meanwhile, boil the potatoes in a little water for about 20 minutes or until tender. Add the spinach and simmer for a further two to three minutes.
4. Drain the potatoes and spinach, add the butter and mash. Add a little milk if the mixture is too dry. Season to taste and serve with the sausages and onion gravy.
