Ingredients (6)

200 g black-eyed peas
2 beef stock cubes
1 tsp oil
2 tbsp cornstarch
salt
1 tsp butter

Method:

Place black-eyed peas in a pot and cover with water. Boil for 45 minutes or until soft.

Once boiled, break the beef stock cubes into the beans, add oil and boil for about 10 minutes, until the stock has dissolved.

Mix cornstarch with 3 tablespoons of water to create a paste, then add to the bean mixture and stir until thickened. Add salt to taste.

Serve with butter on top.
