No one will know there's a whole tin of black beans in this chocolate cake! This cake is decadently dense and fudgy, but with the wholesomeness of hidden fibre-rich black beans.

Ingredients (11)

1 tin Rhodes Quality Black Beans in Brine — drained and rinsed
3/4 cup white sugar
4 extra-large eggs
1/3 cup melted butter — or oil of your choice
1/3 cup melted chocolate
1 tbsp coffee
1/3 cup cocoa powder
1 tsp baking powder
1/2 tsp bicarbonate of soda
1 pinch salt
1/3 cup chocolate chips

Preheat the oven to 180°C and line a 15 cm round cake pan with baking paper.

In a blender or food processor, blitz all the ingredients, except for the chocolate chips, until completely smooth.

Pour the batter into the prepared pan, sprinkle over the chocolate chips, if using, and bake for 45-55 minutes or until a skewer comes out clean.

Let the cake cool before flipping it onto a cooling rack.

Serve as is with a dusting of cocoa powder, a dollop of vanilla yoghurt and some fresh berries or decorate with your favourite chocolate icing for an extra indulgent finish
