Delicious low-GI muesli with fresh berries and seeds.

Ingredients (9)

375 ml oats — rolled
180 ml apple juice
orange — zest only
125 ml dried cranberries
1 cup plain yoghurt — (or Greek-style)
80 ml sunflower oil
80 ml pumpkin seeds
1 cup mixed berries — fresh
honey — for drizzling

Place the oats, juice, zest and cranberries in a bowl and soak for at least 6 hours.

Do this the night before.

Stir in the yoghurt and seeds and gently add the berries.

Serve drizzled with honey.
