0.00 0 tinned tomatoes — peeled
0.00 0 sea salt and freshly ground black pepper
15.00 ml fresh oregano — chopped
30.00 ml fresh basil — chopped
15.00 ml fresh parsley
15.00 ml brown sugar
30.00 ml fresh basil — chopped

Heat the olive oil in a saucepan
over medium heat and sauté the
onion for 3-4 minutes, stirring
occasionally until the onion is soft.
Add the garlic and sauté for another
1-2 minutes or until the flavour
of the garlic has developed.
Add the tomato and season with
salt and pepper. Bring to the boil,
reduce heat and simmer gently
for 1 hour, stirring frequently. Add
the herbs and sugar and simmer
for another 10 minutes. Adjust the
seasoning if necessary.
