Versatile tomato sauce.
|45 ml||olive oil|
|2||onions — chopped|
|15 ml||brown sugar|
|2-3||garlic cloves — chopped|
|3 tins||Rhodes Chopped Tomatoes|
|sea salt and freshly ground black pepper|
|15 ml||fresh oregano — chopped|
|30 ml||fresh basil — chopped|
|15 ml||fresh parsley — chopped|
Heat the olive oil in a saucepan over medium heat and sauté the onion for 3-4 minutes, stirring occasionally until the onion is soft. Add the sugar.
Add the garlic and sauté for another 1-2 minutes or until the flavour of the garlic has developed.
Add the tomato and season with salt and pepper.
Bring to the boil, reduce heat and simmer gently for 1 hour, stirring frequently. Add the herbs and simmer for another 10 minutes.
Adjust the seasoning if necessary, store in glass jars until needed.
