Ingredients (17)

2 aubergine — sliced
1 kg beef mince
2 onions — sliced into rings
2 garlic — cloves, crushed
30 ml curry powder
60 ml flour
60 ml tomato purée
60 ml chutney
60 ml Worcestershire sauce
250 ml stock — beef
2 bananas — sliced
salt and freshly ground black pepper — to taste
TOPPING
300.00 ml yoghurt — banana
2.00 eggs — beaten
60.00 ml flour — cake
3.00 ml turmeric
3.00 ml curry powder

Method:

Preheat the oven to 180 ºC (350 ºF). Spray a large ovenproof dish with non-stick spray. Sprinkle the brinjal slices with salt and leave in a colander for a few minutes. Pat dry with paper towelling and cube.
Fry the mince until done and remove from the pan. Sauté the onion and garlic until soft. Add the brinjal cubes and curry powder and stir-fry for another minute. Sprinkle with cake flour and mix lightly. Add the mince and the remaining ingredients. Simmer for about 5 minutes until flavours are fully developed before turning into the oven dish.
Mix all the topping ingredients and pour over the mince mixture. Bake for 30 minutes or until set.
Serves 6.
