Banana, choc chip and buttermilk flapjacks

Start your day off with a generous serving of these buttermilk flapjacks enriched with mashed banana and choc chips in the batter.

Ingredients (10)

1 1/3 cup flour
1 1/2 tbsp sugar
2 tsp baking powder
1 tsp ground cinnamon
pinch salt
1 cup buttermilk
1 egg
3 tbsp butter — melted, plus extra for frying
2 bananas
1/4 cup chocolate chips

Method:

Place everything, aside from the choc chips, into a blender and blend until combined.

Add the choc chips to the batter, stir through and refrigerate for at least 30 minutes.

On medium heat, grease the pan using a blob of butter, to just coat the pan. Spoon the batter into the pan and fry on each side for about 1-2 minutes until cooked through and golden.

Serve with whipped cream, maple syrup and fresh berries or your favourite assortment of toppings.
