Baked fish with avocado pear sauce

Ingredients (14)

2 kg fish — cleaned and scraped
salt and freshly ground black pepper — to taste
2 garlic — cloves, crushed
30 ml fresh dill — chopped
10 ml fresh ginger — grated
10 ml lemon — zest only
30 ml lemon juice
65 ml oil
Sauce:
100 ml cream — or smooth cottage cheese
5 ml curry powder
100 ml mayonnaise
100 ml stock — chicken
1 avocado — finely chopped
30 ml spring onions — finely chopped

Method:

Preheat the oven to 200 ºC.
 Grease a large sheet of aluminium foil with oil.
Make 3 diagonal slashes in the fish, but do not cut all the way through.
Season the inside and outside of the fish to taste with salt and black pepper and place on the aluminium foil sheet.
Mix the remaining ingredients, except the sauce ingredients, and spoon over the fish.
Wrap the fish tightly and leave for about 1 hour.
Bake for about 15-20 minutes or until the fish is no longer glassy.
Unwrap the aluminium foil, turn on the oven grill and grill until golden brown.
Place all the ingredients for the sauce, except the spring onions, in a food processor and process until smooth.
Season to taste with salt and black pepper.
Spoon into a small bowl sprinkle with the chopped spring onions and serve with the fish.
Serve brown bread on the side.
