Baked amasi chicken with lemon and rosemary

8-10 chicken — pieces
500 ml buttermilk
4 garlic — cloves, bruised
2 onion — quartered
lemon — zest and juice
30 ml chicken spice mix
4 fresh rosemary — sprigs
30 ml fresh chillies — 573
lemon — slices or wedges

Grease an
ovenproof dish with non-stick spray.

1. Put the chicken, amasi, garlic
and onions in a marinating dish. Mix well and leave to marinate overnight.

2. Preheat
the oven to 180°C. Remove the chicken, onion and garlic from the marinade and arrange
in the oven-proof dish.

3. Season
the chicken with the lemon juice, zest and spice mix. Tuck the rosemary between
the chicken pieces and drizzle the oil over.

4. Bake for 45-60 minutes or until
golden brown and done. Serve with lemon slices or wedges.
