Bacon wrapped stuffed chicken
|2||chicken breast fillets — with skin and on the bone|
|1/2 cup||sun-dried tomatoes — in olive oil|
|4-6||mature cheddar cheese — or mozzarella, sliced|
|2 tsp||pesto — basil|
|8||bacon — streaky smoked, sliced|
|fresh basil — to garnish|
Heat the oven to 190°C, and prepare an oven safe dish with a drizzle of olive oil.
Cut a pocket into the chicken breast fillet, and stuff it with slices of cheese, sun dried tomato and lashings of basil pesto.
Wrap each chicken breast in 3 – 4 slices of bacon, fastening it with toothpicks for the baking process.
Bake in a preheated oven for 30 – 40 minutes, and serve with starch or vegetables.
