Bacon wrapped stuffed chicken

Tender baked chicken breast, wrapped in bacon and stuffed with sun dried tomato, cheddar and basil pesto.

Ingredients (6)

2 chicken breast fillets — with skin and on the bone
1/2 cup sun-dried tomatoes — in olive oil
4-6 mature cheddar cheese — or mozzarella, sliced
2 tsp pesto — basil
8 bacon — streaky smoked, sliced
fresh basil — to garnish

Method:

Heat the oven to 190°C, and prepare an oven safe dish with a drizzle of olive oil.

Cut a pocket into the chicken breast fillet, and stuff it with slices of cheese, sun dried tomato and lashings of basil pesto.

Wrap each chicken breast in 3 – 4 slices of bacon, fastening it with toothpicks for the baking process.

Bake in a preheated oven for 30 – 40 minutes, and serve with starch or vegetables.
