TOASTED ENGLISH MUFFINS WITH AVOCADO

4	english muffins

	basil pesto
	fennel
	radishes — sliced

Method:

Avocado on sourdough with pumpkin seed dukkha and smoked salt

Toast two slices of sourdough bread. In a bowl, mash one avocado and spread over the sourdough toast. Assemble the sliced avocado and halved cherry tomatoes onto the toast and finish with microgreens, smoked salt and pumpkin seed dukkha. Finish with a spritz of lemon juice.
